Texas BBQ Biscuits or Texas Turnovers
Wondering what to do with the left over roast beef in your crock pot? Want to fix something that EVERYone would love, including the kids? Try this easy recipe - takes minutes to prepare and quick bake in the oven!
1 Pkg. of flakey biscuits
2 cups roast beef
1/2 can of kidney beans
1/4 cup of frozen corn
1/2 BBQ sauce
Shredded Mozzerella cheese (8 tsp)
Mix the roast beef, BBQ sauce, beans and corn until blended well.
Spray the inside of muffin cups and stretch out the biscuits individually, filling the cups and stretching up the side of each.
Place the BBQ mixture into each cup until well mounded (like raised, fully baked muffins)
Sprinkle the tops of each mound with cheese.
Bake for 25-35 minutes at 350 and serve with the remaining side of kidney beans and side of sour cream or low fat ranch dressing!

********** Also, you can use ready made pie crust (if you need to use them up!) Instead of biscuits. Cut the time down to 15-20 min., same temp. Fork the edges of each Texas Turnover, use egg on the tops and sprinkle with cheese!
